Sausage & Potato Hash

Ingredients
5 cups Potato, diced
2 Tbsp Extra Virgin Olive Oil
1 Smoked Sausage Link, sliced
1 Green Bell Pepper, diced
cup Green Onions, chopped
tsp Kosher Salt
tsp Celery Seed
tsp Ground Black Pepper
tsp Nutmeg
cup Chicken Broth
1 Tbsp Cider Vinegar

Directions
1. Place potatoes in a large saucepan. Fill with water until potatoes are completely covered. Bring to a boil and decrease heat. Simmer for 5 minutes or until tender. Drain and set potatoes aside. In a large skillet, warm olive oil over medium heat. Add sausage and cook for 5 minutes or until well browned. Stir in green pepper and green onions. Cook for 2 minutes or until tender. Mix in potatoes, salt, celery seed, ground pepper and nutmeg. Cook and stir for 5 minutes. Pour in broth and vinegar. Stir until ingredients are well combined. Cook for an additional 5 minutes or until liquid is absorbed. Serve warm.
