No-Bake Lemon Tart

Serving size: 6-8

Ingredients
10 Tbsp Unsalted Butter
cup Brown Sugar
7 Whole Graham Crackers, finely crushed
cup Whole Milk
1 tsp Unflavored Gelatin
1 cup Sugar
cup Fresh Lemon Juice
2 tsp Lemon Peel, grated
2 Large Eggs
Mixed Berries
Sugar

Directions
1. Begin by melting six tablespoons of butter in a large skillet over medium-high heat. Whisk in the brown sugar for about two minutes or until it becomes bubbly. Stir in the crushed graham crackers. Let cook for one minute. Remove from the heat and press into a nine-inch baking dish with a removable bottom. Let cool completely. Pour the milk into a small bowl and sprinkle the top with the gelatin. Let stand for about 10-15 minutes. In a medium saucepan, combine one cup of sugar, lemon juice, and lemon peel. Whisk in the eggs and four tablespoons of butter. Cook over medium heat for five minutes, whisking constantly until the custard thickens and begins to boil. Remove from the heat immediately. Whisk in the gelatin and milk mixture until dissolved. Let stand for about 10 minutes before pouring into the prepared crust. Chill for at least three hours before serving with fresh berries and powdered sugar.
